Good Nutrition is Important for Everyone, Including Men With APC

EATING HEALTHY FOODS IS IMPORTANT FOR ALL OF US AND A GOOD PRACTICE WHEN YOU HAVE A DISEASE LIKE ADVANCED PROSTATE CANCER (APC)

The Prostate Cancer Foundation (PCF) has always recognized that nutrition and a healthy lifestyle are integral aspects of the prostate cancer journey.2 Start eating healthy by following some commonsense advice. For example, make sure you include lots of colorful plant-based foods in your diet and keep a healthy weight. These are some important eating and diet strategies for everyone, including men with prostate cancer. When it comes to shopping for food, remember to choose healthy proteins like lean fish, nuts, seeds, and beans while avoiding protein from processed meats.2 These are good choices for you to make sure you consume important nutrients like zinc, iron, and vitamin B12. Studies show that plant-based diets also provide important antioxidants and nutrients that work together to help support a healthy lifestyle in patients with cancer. Please speak with your healthcare provider for a more personalized nutrition plan.

Example daily meal plan

Breakfast: Agave Granola With Walnuts, Flax, and blueberries

MeasurementIngredient
2 cupsOatmeal
1/4 cupsOatbran
1 cupAgave
1 tbspOrange zest
1 tspVanilla extract
1/2 tspCinnamon
1/2 cupDried blueberries
1/4 cupChopped Walnuts
1 tbspFlax seed meal
2 tbspMaple or date sugar (optional)
N/ACanola oil spray

BREAKFAST COOKING INSTRUCTIONS

  1. Preheat oven to 350 degrees. Spray a cookie sheet with canola oil spray.
  2. Mix oatmeal, oat bran, agave, orange zest, and cinnamon in a large bowl.
    Spread on cookie sheet and bake for 15 minutes.
  3. Toss with a spatula and continue to bake for 15 additional minutes.
    Transfer to a bowl to cool.
  4. Add blueberries, walnuts, flax, and maple sugar and toss.
  5. Let chill.
  6. This will keep in an airtight container for about 3 weeks.

Lunch: Broccoli Caesar Salad

MeasurementIngredient
2 cupsBroccoli florets (steamed for 2 minutes)
1 tbspChopped fresh garlic
1Lemon (juice)
1 tbspLemon zest
1/4 tspRed chilies
1 tbspOlive oil or lemon olive oil
1/4 tspLarge crusty sea salt
2 tbspParmesan or Romano cheese
1 tbspHerb bread crumbs
To tasteGarnish: shaved Parmesan (optional)

LUNCH COOKING INSTRUCTIONS

  1. Prep all ingredients to specifications.
  2. Toss in a bowl and serve chilled.
  3. Garnish with shaved Parmesan.

DINNER: GLUTEN-FREE SPAGHETTI MARINARA

MeasurementIngredient
1 lbSpaghetti (rice, quinoa, or corn pasta variety)
2 tbspOlive oil
1Onion (diced)
4 tbspGarlic (chopped rough)
2 cans (28 oz each)Organic San Marzano tomatoes
5Fresh basil leaves
To tasteSea Salt
To tasteCrushed red pepper flakes

DINNER COOKING INSTRUCTIONS

  1. Sauté garlic in olive oil.
  2. Add tomatoes and basil.
  3. Let simmer for 30 minutes.
  4. Season to taste with sea salt and crushed chilies.
  5. Puree in a blender or food processor.
  6. If you like the flavor of basil, add additional chopped basil.
  7. Cook pasta in boiling water until al dente.
  8. Place desired amount of sauce in a pan and heat.
  9. Toss in pasta.
  10. Serve in a bowl.
